Healthy Vegan Chocolate Banana MuffinsAnyone who loves chocolate? And bananas? And muffins? Who doesn’t! Or I don’t know who you are; who are you? Think of these three in one recipe and you’re in heaven!

I wanted to bake some healthy snacks and I had some very brown-spotted ripe bananas. So what do you make? Banana bread of course! And I was craving chocolate, so I thought of a way to do both. No better way than to combine bananas and chocolate.

Lets go BANANAS!

Healthy Vegan Chocolate Banana Muffins

Serving 12 muffins

Ingredients:

  • 3 Bananas
  • 2 Flax eggs
  • 4 tbsp Applesauce
  • 4 tbsp Maple syrup
  • 100 ml Almond milk (or any other dairy-free milk)
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • ½ tsp Vanilla extract
  • 25 gr Cocoa powder
  • 225 gr Spelt flour (or gluten-free option if necessary)

 

Instructions

  1. Preheat your oven to 175 degrees Celsius.
  2. Start with making your flax-eggs; put 2 tbsp of flaxseed and 4 tbsp water in a bowl and let it sit for a couple of minutes to set.
  3. Grease your muffin tin.

Banana Layer:

  • 1 ½ Banana
  • 1 Flax egg
  • 2 tbsp Applesauce
  • 2 tbsp Maple syrup
  • 50 ml Almond milk
  • ½ tsp Baking soda
  • ¼ tsp Baking powder
  • ½ tsp Vanilla extract
  • 125 gr Spelt flour
  • Pinch of salt.
  1. Mash up your bananas in a big bowl and put the applesauce, maple syrup and milk with it.
  2. Mix and put the flax egg in the mixture.
  3. Mix this to a smooth consistency.
  4. Now put in all your dry ingredients and make sure it’s incorporated well.

Chocolate Layer:

  • 1 ½ Banana
  • 1 Flax egg
  • 2 tbsp Applesauce
  • 2 tbsp Maple syrup
  • 50 ml Almond milk
  • ½ Baking soda
  • ¼ Baking powder
  • 25 gr Cocoa powder
  • 100 gr Spelt flour
  • Pinch of salt

 

  1. Same way as the banana layer; first mix the wet ingredients. And then out in the dry ingredients and mix well.

Now you can start to assemble your muffins. Get creative and do something fun with it. Layer the two different flavors, make swirls, do whatever you want!

Bake them for 20-25 minutes. Depends on your oven, just make sure an inserted toothpick will come out clean. Now let them cool off! This is the hardest part, you guys!
