Breakfast Baked Sweet Potato (GF + VG)

Vegan Baked Sweet PotatoWait, what? Sweet potato as breakfast? Seems a bit strange, but it definitely is not. It’s a good way to start your day. Healthy and a filling breakfast, that’s what you need. Well I do, so I can get through the day haha. You can also eat this as lunch of course!

And of course, if you know me, I made a sweet dish. But the taste of sweet potato and fruit is a pretty good combination, if you ask me. You can easily switch it up, but at the moment this is my favorite one. And another plus, it’s quick if you use this way to make it!

Here it goes!

Vegan Baked Sweet Potato

1 Serving

Ingredients:

  • 1 Sweet potato
  • 1 Banana
  • 3 tbsp Soy yogurt
  • 1 tsp Cashew nut butter
  • Handful Blueberries
  • Granola

 

Instructions:

  1. Wash the sweet potato and pierce with a fork. Place in the microwave on high for about 6 min. Rotate in between. You can feel if it’s soft enough, otherwise put it in for an extra minute. (If you have enough time, you can also put the sweet potato in the air fryer for 30 min on 200 degrees Celcius)
  2. Split the baked sweet potato open; be careful it’s VERY hot! And let it cool a bit.
  3. Top with yogurt, banana, blueberries, granola and drizzle with cashew nut butter.

Time to eat!
