Mashed chickpeas are totally something different than hummus. Haha okay, just kidding. But I do like some bits and pieces in it and you only get that when you make it yourself.
I was just looking for a topping on my sandwich. I had nothing left in the fridge and I craved something savory. Huh wait, what? Haha jup, something savory. Then I found some leftover sweet potato mash and a can of chickpeas. And this recipe was born!
- 1 can Chickpeas (400 gr)
- Sweet potato mash ( ½ sweet potato)
- 2 tbsp Soy yogurt
- ½ tsp Pepper
- ¼ tsp Salt
- ½ Turmeric
- ¼ Garlic Powder
- ½ Paprika Powder
- 2 Slices of (spelt) bread
- Put everything in a blender and blitz it up. It doesn’t have to be smooth, your own preference. You can add more spices if you want to.
- Spread on hummus on one of the slices of bread, lay down some spinach leaves, put on the chickpea mix and top with cucumber and sprouts. Top off with the other slice of bread, cut in half and eat!
