Vegan Avocado Grilled Cheese Sandwich

 

There’s no better thing than avocado toast, but I think I found a way to make it even better! Grilled cheese combined with avocado is heaven!

My boyfriend made a grilled cheese sandwich and is was like; I want that too! Luckily I had some vegan cheese lying around, but we also had an almost overripe avocado that had to be eaten. And then I started thinking, why not combine these two in one sandwich?! And a plus; my boyfriend liked it too.

 

2 Servings

Ingredients:

  • 1 Avocado
  • 4 slices Spelt bread
  • 2 Tomatoes (sliced)
  • 4 slices Vegan Cheese

 

Instructions:

  1. Heat up a grill.
  2. Cut the avocado in half, get the pit out and scoop out the flesh. Mash this with a little bit of pepper and salt.
  3. Spread the avocado mash on two of the slices of bread, top with slices of tomato and cheese. Top of with the other two slices of bread.
  4. Put the two sandwiches on the grill and when the cheese is al melted down, you’re ready to eat!

Serve with ketchup or curry on the side, de-li-cious!
