Mini PB/Banana & BB/Vanilla Muffins (VG + GF)

Vegan PB & Banana Muffins


I was really thinking about a healthy snack I could bake. I lost my inspiration a little bit, but then I was thinking. What better as a snack than muffins? I couldn’t think of anything better at the moment, so it was time to make muffins.

I always like different snacks for the whole week. That’s why there are two different flavors in 1 recipe. I like to have variety and it’s pretty easy to divide your batter for muffins. So I thought which flavors I like together and made them in little cute muffins.

Vegan Blueberry & Vanilla Muffins


Serving 12 muffins


  • 1 Banana
  • 1 tbsp Coconut oil
  • 300 ml Almond milk


  • 2 tbsp Peanut butter maple/coconut (Mister Kitchens)
  • ½ tbsp Maple syrup
  • 100 gr Oatmeal
  • Pinch of Salt
  • ½ Banana


  • 1 tsp Vanilla extract
  • ½ tbsp Maple syrup
  • 100 gr Oatmeal
  • Pinch of Salt
  • 50 gr Blueberries



  1. Preheat oven to 200 degrees Celsius
  2. Mash the banana, divide in two and put in two different bowls.
  3. Divide the coconut oil and almond milk between the two bowls.
  4. Add rest of the ingredients to the two different bowls, except for the banana and blueberries.
  5. Mix both mixtures until fully incorporated.
  6. Add the blueberries to the right bowl and fold in carefully.
  7. Put the mixtures in a muffin tin.
  8. Slice the banana and add a slice to every muffin with the right mixture.
  9. Bake the muffins for 12-15 min.


Now you have a delicious healthy snack for the whole week! And even two different flavors.
