Quesadillas are even better than tortilla’s. Why? ‘Cause there’s melted cheese in them! And yes as a vegan it’s still possible to eat cheese. There are so many options nowadays. So it was more than obvious that I needed to make quesadillas!
And as you can read in the title, this one contains tempeh. At the moment it is one of my favorite things to eat. So easy to make, contains loads of protein and its freaking delicious. With the rest of the ingredients, it makes one of the best bowls I made! Wanna try? Here you go.
I had a pretty good amount (600 gr) of tofu that was close to the expiration date. Yes I’m that kind of person that thinks they remember the date and when they check it’s the wrong date, haha. And I’m also that person that doesn’t likes to throw away food, so it was time to make a recipe with it.

And I did manage to get pretty much of the same taste.
